About the Role:
As a Line Cook at The Culver Hotel, you will play a pivotal role in delivering exceptional dining experiences that reflect our hotel's historic charm and commitment to quality. You will oversee the preparation and presentation of dishes, ensuring that each plate meets our high standards for taste and aesthetics. Collaborating closely with the Executive Chef and Sous Chef, you will guide and mentor the kitchen team, fostering a cohesive and efficient work environment. Your responsibilities will include managing inventory, maintaining cleanliness and safety protocols, and contributing to menu development by incorporating seasonal and locally sourced ingredients. This role offers an opportunity to showcase your culinary skills and leadership in a dynamic setting that honors tradition while embracing innovation.
Minimum Qualifications: High school diploma or equivalent. At least 3 years of experience in a professional kitchen, with a focus on line cooking. ServSafe certification or equivalent food safety training. Preferred Qualifications: Culinary degree from an accredited institution. Experience in a leadership role within a kitchen environment. Knowledge of various cooking techniques and cuisines. Responsibilities: Following appropriate personal hygiene procedures to ensure food served to guests is safe for consumption, including disinfecting hands prior to handling food and wearing a hat/hairnet and proper footwear. Preparing ingredients for cooking, including portioning, chopping, and storing food before use. Washing and peeling fresh fruits and vegetables to prepare them for cooking or consumption. Testing foods to determine if they have been cooked sufficiently, using appropriate methods and notify management if a product does not meet specifications. Weighing, measuring, and mixing ingredients according to recipes using various kitchen utensils and equipment. Preparing cold foods, including preparing salads, cold sandwiches, condiments, and dressings. Washing and disinfecting kitchen area including tables, tools, knives, and equipment to ensure sanitary conditions including using sanitizers required by health department. Following and ensuring compliance with food safety and handling policies and procedures, such as product rotation, dating, labeling, cleaning, and organizing coolers/freezers/storage areas across all food-related departments and areas. Setting up and breaking down workstation with required mise en place, tools, equipment, and supplies, ensuring items are to established specs, ensuring adequate fill of containers, storing items appropriately, and cleaning station as appropriate. Following and ensuring compliance with sanitation and cleaning procedures and pest control guidelines. Disassembling and assembling kitchen equipment following safety procedures when cleaning.
