Please note, our kitchen is located in a food trailer connected to the shop. Job Description:
As a lead cook, you will be responsible for overseeing kitchen operations, ensuring food quality, and leading the kitchen team. Your role will include a variety of tasks to ensure the smooth and efficient operation of the kitchen. Key responsibilities include: Line Checks: Perform line checks every shift to ensure all dishes are prepared to the highest standards and meet safety guidelines. Opening and Closing: Manage the opening and closing procedures for the kitchen to ensure all tasks are completed and the kitchen is ready for service. Taste Tests/Test Bowls: Conduct taste tests and prepare test bowls to ensure food quality and consistency. Station Setup: Set up the main station you are working on to ensure readiness for service. Oversee Kitchen Operations: Supervise daily kitchen operations to ensure efficiency and adherence to company standards. Food Safety: Ensure all food is prepared according to safety and sanitation standards. Staff Management and Training: Manage and train kitchen staff on proper cooking procedures, presentation, and safety practices. Maintain Cleanliness: Ensure the kitchen and all kitchen equipment are maintained to high cleanliness standards. Monitor Equipment: Regularly check kitchen equipment for any issues and ensure they are properly maintained. Cross-Training: Be willing to cross-train and work in various kitchen positions as needed. Lead by Example: Demonstrate strong work ethic and professionalism, setting a positive example for the team. Ordering and Inventory Management: Oversee ordering and manage inventory to ensure adequate stock levels and minimize waste. Labor and Sales Reports: Review labor and sales reports to determine staffing needs and adjust labor for each shift accordingly. Requirements Must be 18 years or older to work for Tatsu-Ya Food Handler certification Ability to lift 50 lbs Stand for long periods Strong communication skills Follow directions and procedures Basic cooking knowledge preferred Thrive in a fast-paced, team environment
